Innkeeper’s Blueberry Cobbler

Our most often requested recipe could not be simpler! 

Ingredients

  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1/2 cup butter, cubed
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup whole milk
  • 1 large egg, lightly beaten
  • Whipped cream or whipped topping

Directions

  • In a bowl, combine the berries and fresh lemon juice. Spray canola oil in baking dish.  Add berries to the baking dish. 
  • In a small bowl, combine the flour, baking powder, salt, milk, and egg. Pour over berries. Do not stir.
  • Bake at 350° for 40-45 minutes or until golden brown. Serve with a dollop of whipped cream.
  • Makes 6 servings.
